Roasted Peanut Rice

Roasted Peanut Rice is a simple and delicious South Indian dish. This aromatic rice is prepared by roasting peanuts & grinding it with garlic and other spices.

INGREDIENTS

  • 1/2 cup peanuts - skin removed
  • 1 tbsp sesame seeds
  • 2-3 dried red chillies
  • 2-3 garlic cloves
  • 1 tbsp cumin seeds
  • 4-5 curry leaves
  • 2 tbsp chana dal
  • 1 tbsp urad dal
  • 1 tbsp ghee
  • 1 tsp mustard seeds
  • 1.5 cups cooked rice
  • Cilantro for garnish

INSTRUCTIONS

  • Roast peanuts, sesame seeds, dried red chillies, garlic, cumin seeds and curry leaves in a pan. Take it off the pan and add chana dal and urad dal to the pan and roast them as well. Take it off the pan and grind it all together coarsely. Heat ghee in the same pan and temper mustard seeds. Then add the coarsely ground powder to the ghee and give it a mix. Lastly add cooked rice and coat it with all the masala.
  • Garnish with cilantro and serve warm along with some papad and yogurt.
