Paal Payasam | Indian Rice Pudding | Kheer in an Instant Pot

Paal Payasam also known as rice pudding/kheer is a South Indian delicacy served on happy occasions. This Instant Pot version is the easiest way to make it.

Ingredients

  • 2 tbsp ghee
  • 7-8 almonds
  • 7-8 cashews
  • 7-8 pistachios
  • 6-7 raisins
  • 1/3 cup sugar
  • 1/2 cup rice
  • 2 cups milk
  • 1/2 tbsp saffron
  • 2 cup coffee creamer plain
  • 1-2 tbsp mixed chopped nuts for garnish
  • Pinch of saffron for garnish

Instructions

  • Turn on the Instant Pot in saute mode.
  • Add ghee to the pot and fry mixed chopped nuts like cashews, almonds and pistachios along with raisins for a minute.
  • Then add sugar, saffron, cardamon powder  and rice. Mix it all together and roast for another minute.
  • Then add coffee creamer and milk. Stir it all together and close the Instant Pot with the lid.
  • Select Porridge mode and cook it for 20 minutes. Position the valve in seal position.
  • When the Instant Pot beeps, let the pressure release naturally.
  • Then open the lip and give the payasam a mix. If it is too thick, add little milk and mix it all together.
  • Paal Payasam can be served warm or chilled. Garnish it with chopped nuts and saffron before serving.

Notes

Chop nuts in the nut chopper. It's so much easier.
Use any regular rice for this recipe.
Once its cooked, if the payasam is too thick, add little milk and mix it all together.
Cooking it in an Instant Pot gives the payasam a great texture without putting in much effort. You will not miss the condensed milk at all if made this way. But if needed, you can drizzle some on top.
To make it vegan, skip ghee and use coconut oil.
Use dairy free milk and creamer.
