Veggie Pizza Waffle is a fun way to enjoy best of both worlds. A pizza served as a waffle loaded with veggies is one hearty snack that all would enjoy!
First we need to prepare the pizza sauce using some juicy tomatoes. In a pan, add roughly chopped tomatoes, garlic powder, onions, dried basil, oregano, pepper, salt and little water. Saute it till the tomatoes turn mushy. Use a hand blender to give it a sauce consistency. Check and adjust the seasonings. You can prepare this pizza sauce in advance and store it in airtight container in the fridge. Next step is to make the Pizza Waffle.
MorningStar Farms® Chipotle Black Bean Crumbles™ was a great addition to this recipe. Prepare the crumbles as per the instructions on the packet. I used the skillet method. Then take a piece of pre-cut biscuit dough and stretch it out. Spread the homemade pizza sauce over it. Then add the MorningStar Farms® Chipotle Black Bean Crumbles™ on top.
Now its time to add the veggies. Add chopped onions, bell peppers and corn and top it with grated pizza cheese. You may sprinkle salt and pepper on top. Seal it with another flattened pre-cut biscuit dough. Lightly press around the edges to ensure its sealed properly. Place it in a waffle maker and close the top on your waffle iron and cook for about 3 - 4 minutes, or until the dough is golden brown.
Take it off from the waffle maker and serve them warm with some chutney/ketchup.
