Pav Bhaji Masala - A popular Indian Street Food!

One of the most loved Indian street food is called Pav Bhaji. Its a spicy mix of many boiled veggies which are then mashed and cooked with special spices to give it a lip smacking flavor. Made with a generous amounts of butter, this popular snack is served with Indian pav/water roll along with lemon wedges and onions.

INGREDIENTS

  • 3 potatoes
  • 2 carrots
  • 1 cauliflower
  • 1 cup chopped french beans
  • 1 cup green peas
  • 1 cup spinach
  • Turmeric and salt as required
  • 1/2 cup butter
  • 1 tsp cumin seeds
  • 2 slit green chillies
  • 5-6 cloves garlic
  • 1 inch ginger
  • 2 large onions
  • 7-8 tomatoes
  • 2 bell peppers
  • 2-3 tbsp pav bhaji masala
  • 1 tsp turmeric powder
  • 1 tbsp coriander cumin powder
  • 1-2 tbsp melted butter
  • 1 cup chopped cilantro
  • 1 onion
  • 1-2 lemons

INSTRUCTIONS

  • The first step is to peel and roughly chop the potatoes and carrots. Then cut cauliflower florets and green beans. Boil them along with spinach and green peas in turmeric + salt water, in batches. They need to be overcooked and should be mashable easily. Strain the water. Reserve the water and use it as vegetable stock in any recipe which calls for stock. I prefer to mash the veggies at this stage. Mash the vegetables with a masher.
    Heat butter in a pan. Temper cumin seeds and once they crackle add slit green chillies, minced garlic and ginger. Fry for a minute and then add chopped onions. Saute till they turn translucent and then add chopped tomatoes and salt. Tomato is the hero ingredient here. Saute it well till the tomatoes turn soft and mushy. Next add chopped bell peppers and continue to saute for another 2 minutes. Then add the dry spices like turmeric powder, coriander cumin powder and pav bhaji masala. Mix and fry for another minute. Add more butter at this stage.
    Next add the mashed veggies. Mix it all together and add little water. Simmer and bring to a boil. Then turn off the flame and garnish with chopped cilantro. Now to prepare the pav/bread. Heat a griddle and add some butter on it. As it melts, sprinkle black salt and little pav bhaji. Quickle mix it and place a cut pav over it. Cook both sides in spiced butter. Prepare as many pav as you want in similar fashion. While serving, garnish the pav bhaji with chopped onions, cilantro and lemon juice. And yes, don't forget to add some more butter on top. Trust me, butter is what makes pav bhaji - AWESOME! Serve hot.
NOTES
You can add any more veggies to this as you wish. I have added beets, sprouts, raw banana on some occasions and they taste great.
