Blueberry Pancake Almond Milk Smoothie

Convert your favorite vegan blueberry pancakes to Breakfast smoothies! This easy blueberry, banana, almond milk smoothie with dates is one healthy and tasty treat! Made with just a few basic ingredients, this dairy-free smoothie serves your favorite pancake flavor in the form of a creamy shake and that too in half the time!

Ingredients

  • 1 cup almond milk
  • ½ cup frozen blueberries
  • ¼ teaspoon cinnamon powder
  • 1 banana
  • 1 pitted dates
  • 2 tablespoon oats
  • 2 tablespoon cashews
  • 1 tablespoon protein powder

Instructions

  • Add almond milk in the blender.
  • Then add blueberries.
  • Followed by old fashioned oats.
  • Next add the raw cashews.
  • Add dates. I have used dried dates, but you can use organic Medjool dates.
  • Then add the protein powder.
  • Lastly add cinnamon powder and sliced banana.
  • Blend it until its smooth and creamy.
  • Pour this Blueberry Banana Almond Milk Smoothie in serving glasses, throw in some fresh blueberries as a topping, and then serve it immediately or chilled.

Notes

Feel free to use frozen or fresh blueberries and banana for this recipe. Ensure that the banana is fully ripe. I enjoy making my smoothies with almond milk but if you don't have almond milk, you can use any milk available to you.
You can also add ¼ teaspoon of ginger powder along with the cinnamon for more flavor.  This smoothie with Dates and banana should already be sweet enough. But you can also add maple syrup to make it sweeter. If you want, you can also skip adding protein powder. 
Sneak in some greens like spinach or kale for extra vitamins and minerals. Throw a frozen waffle in the blender for a more authentic/indulgent flavor. You can easily double or triple the recipe to make more servings.
