Zaffrani Mewa Doodh is a rich, thick and creamy milk based drink that is best served warm. Made with saffron, vegan ricotta cheese and different dry fruits, this popular drink from the Indian cuisine is given a dairy free twist to make it a treat to sip on. A refreshing drink that packs a nutritious punch too.
First, soak saffron in warm milk for 10 minutes. Meanwhile, coarsely grind the nuts like almonds, cashews, pecans and pistachios together. Pour Silk All Natural Vanilla Almondmilk to a thick bottomed pan and bring cook on a medium flame to bring it to a boil. Then add vegan cottage cheese, poppy seeds and chopped dates. Stir and lower the flame. Continue to cook the milk for 45-50 minutes. Keep stirring regularly. Eventually, the milk would reduce and thicken a bit. Then add the saffron and milk mixture to the pan. Stir and take it off the flame. You can serve this Vegan Zaffrani Mewa Doodh either hot or cold.
