Corn prep
Shuck the corn
Melt the butter (either in the microwave or in a saucepan). Transfer to a bowl and set aside.
Preheat your grill to medium high.
Grill the corn with the lid closed turning occasionally until the corn is charred and cooked. The amount of charring is a personal preference (some prefer light, while others prefer well done)
Remove the corn from the grill and immediately brush the corn with the melted butter Make sure the corn is coated fully. This will help the rub better adhere to the corn.
Liberally sprinkle the spice mix onto the corn.
After this, rub corn with lemon. Traditionally, a lemon is cut in half and rubbed over the corn to ensure even coverage. An alternative is to cut a piece of lemon and just rub it on the corn to coat it. (Be cautious here – lest it become too sour).
