Potato Hummus Waffles

If looking for a savory vegan snack, then try this gluten-free potato hummus waffles recipe. They are crispy, delicious, and easy to make!

Instructions

  • In a bowl, add boiled potatoes and mash them with a fork. Alternatively, you can even grate them.
  • Then add any vegan herb butter, crushed black pepper, and red pepper flakes.
  • Next, add the hummus.
  • Then add Italian seasonings and cilantro.
  • Now add the all-purpose flour and rice flour to the bowl.
  • Add the minced garlic and chopped onions to the bowl.
  • Followed by water or vegan buttermilk. Add salt at this point. Mix all these together and make a thick batter. Add more water as needed to do so.
  • Preheat the waffle maker, with a cooking spray grease the molds. Pour a ladle full of batter into each mold of the waffle maker. Ensure it spreads evenly and all over.
  • Cook as per the maker's instructions. Once it gets the desired brown color, take them carefully. It could take 4-5 minutes.

Notes

Feel free to add more veggies to the batter like grated zucchini, carrots, onions, bell peppers, etc to make this savory vegan snack more healthy.
If your butter is salted and even your hummus has salt, add salt to the batter accordingly. Instead of water, you can also use buttermilk or chaas.
You can also add baking powder to the batter to make it more soft and fluffy. If you do add it, allow the batter to rest for 10 minutes. 
Instead of using cheese as a topping, you can also mix it into the batter. Use sharp cheddar cheese (if not vegan) or any vegan shredded cheese.
