Iranian Style Gluten Free Polenta Cake Stir Fry

Quick, easy & delicious, this Vegan Polenta stir-fry with Iranian spices is perfect for a better-than-takeout weeknight dinner! It's free of soy & gluten.

  • 18 oz polenta
  • oil for grilling
  • 1 tbsp cooking oil
  • 1 onion
  • 5-6 cloves garlic
  • 2 tbsp Iranian spice mix
  • 1 tbsp curry powder
  • 1 tsp turmeric powder
  • 1/2 tsp cinnamon powder
  • 1/2 tsp pepper powder
  • salt as required
  • 1/3 cup chopped cilantro
  • 10-12 strands saffron


  • The first step is to cook the polenta. Open the package and slice polenta.
  • Iranian Style Gluten Free Polenta Cake Stir Fry makes for a great side or as a full meal on a weeknight.
  • Grill them in a pan using little oil. Once done, cut them in small bite sized pieces.
  • Heat oil in a pan. Add and fry minced garlic and chopped onion till the onions turn translucent.
  • Then add the Iranian spice mix, curry powder, salt, pepper, turmeric powder and cinnamon powder.
  • Mix and fry for 2 minutes. Then add the chopped polenta, chopped cilantro and saffron.
  • Give it a good mix and serve immediately.


Try finding Iranian spice at your grocery stores.
You can use any curry powder in this recipe.
If you are unable to find polenta, you can make this recipe using tofu/paneer.
