Mixed flour crackers
Mixed flour crackers are crispy, thin, flaky and vegan - easy to make and ready in 30 minutes. A delicious homemade snack perfect for your entire family!

Ingredients to make the paste
- 2 jalapenos or 8-10 green chillies
- 10-12 cloves garlic
- 1 inch ginger
Ingredients to make the dough
- 1 cup yellow sweetcorn flour/makki ka atta
- 1/2 cup pearl millet flour/bajra
- 1/2 cup gram flour/chickpea flour/besan
- 1/4 cup semolina/rava
- 2 tbsp wheat flour
- 1 tsp turmeric powder
- 1/4 cup white sesame seeds
- 3 tbsp lemon juice
- 1 tsp sugar
- salt as required
- 1/4 cup yogurt
- 1-2 tbsp crushed fenugreek leaves optional
- 1-2 tbsp Wesson Canola Oil
To prepare the dough
Heat Wesson Canola Oil in a frying pan.
Fry some white sesame seeds for few seconds until they turn golden.
Then add the green chillies paste. Fry for 15-20 more seconds and take the pan off the flame. Set it aside for now.
Add yellow sweetcorn flour (Makki ka aata) , pearl millet flour (Bajra), whole wheat flour, Semolina (Rava) and chickpea flour (Besan) to a mixing bowl.
Then add turmeric powder, lemon juice, sugar and salt. Mix it all together well.
Add the fried sesame-chilly paste to the flour mix.
Mix well. Add yogurt and knead into a stiff dough. Use water and oil as needed.
To make and fry the crackers
Shape into balls, then flatten and roll them into big discs and then cut out smaller discs with the help of a cookie cutter.
Deep Fry the discs in hot Wesson Canola Oil on medium flame.
When they begin to fluff then flip them over and continue to fry them until they become light golden.
Remove from the pan and soak the excess oil using a paper towel.
Serve with some spicy green chutney or ketchup. Mixed Flour Crackers are crispy on the outside but have a chewy texture toward the center.
Add crushed fenugreek leaves (if available) to the flour mix for an extra flavor.
You need not use the whole of 1/4 cup water. Use only as needed to make a stiff dough.
You should be able to get all of these flours at your nearest Indian grocery store, or at your nearest Walmart.
You can store these crackers in an airtight containers for few days.
