  • For pesto sauce
  • 1 bunch cilantro
  • 1 cup fresh basil leaves
  • 1/2 cup pine nuts
  • 4 cloves garlic
  • Half inch ginger
  • 1 tbsp lemon juice
  • 1 tsp cumin powder
  • 1/2 cup olive oil
  • Salt to taste
  • Pasta Ingredients
  • 1 packet pasta
  • 1 cup cooked edamame
  • 1 tbsp olive oil
  • Salt and pepper as required
  • Parmesan cheese as required
  • Red pepper flakes (optional)

  • In a processor, add cilantro, basil, pine nuts, garlic, olive oil, lemon juice, ginger, cumin powder and salt. Blitz to a smooth paste. Cilantro Basil pesto sauce is ready. You can make a batch and store it in the fridge for a week and use as required. This pesto sauce is yummm!! Refreshing and aromatic, this pesto sauce can be used as a spread, on salads as dressings and/or as a dip.
You can use any pasta for this recipe. I used elbow pasta. Cook the pasta as per the instructions on the packet. In the pan, heat olive oil. Add edamame and fry for 2 minutes. Feel free to add more veggies to this pasta. Then add the cooked pasta and pesto sauce. Toss them all together. Season it with salt and pepper as required. You can further garnish it with vegan or regular Parmesan cheese.
