Frozen Raspberry Date Coconut Balls

  • 1 cup frozen raspberries
  • 2 cups unsweetened desiccated coconut
  • 1 cup raw cashews
  • ½ cup dried dates
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt


  • In the food processor add desiccated coconut, cashews, and dates.
  • Then add vanilla extract, a pinch of salt, and frozen raspberries.
  • Pulse till the mixture is broken down, and is well combined and sticking together.
  • Transfer it to a plate. Using your hands, shape the mixture into tablespoon sized balls. At this point, you can leave it as is or roll it over some desiccated coconut. Place them in the fridge for 30 minutes to set.
  • Once they are set, enjoy these gluten-free, dairy-free Frozen Raspberry Date Coconut Balls guilt-free!


I recommend using frozen raspberries in this recipe because they produce this gorgeous vibrant pink color that no one can resist! When using frozen raspberries, remove them from the freezer 15 minutes before you start making this recipe. You can use fresh raspberries as well.
You can use shredded coconut, unsweetened desiccated coconut, or even freshly grated coconut. Fresh or dried dates can be used. You can also mix in some raisins or a little honey/maple syrup along with the dates for more sweetness.
Ensure the cashews are not stale. You can also add dry oats, nuts, seeds, nut butter in this recipe. If required, allow the mixture to firm up a bit in your fridge (about 10 minutes) before rolling into balls. 
You can make this in advance and store it in the fridge in an airtight container. It stays good for a week. Make it in small batches that will last you for a week. If you wish to store for longer then you can freeze.
You can eat them straight from the freezer or defrost them by popping them in the fridge overnight. The balls will soften at room temperature but will hold their shape. You can try this same recipe with frozen blueberries as well.
