  • 2 cups frozen raspberries
  • 2 tbsp sugar
  • 2 cups milk
  • 1/2 cup heavy cream
  • 3/4 cup white chocolate chips
  • 1 tsp rose essence
  • Pinch of salt
  • Few drops pink color

  • First step is to make raspberry puree. I have used frozen raspberries for this recipe, you can also use fresh ones. Add raspberries and sugar in a bowl, mix and let it sit for 15 minutes. Now blitz them in a blender with little water. Pass it through a sieve to throw away the seeds.
In a pan, add milk and heavy cream. Once it begins to simmer and bubbles begin to appear, take it off the flame. Add white chocolate chips and mix it till it melts. Then add the raspberry puree, rose essence, salt and pink color to this mix. Give it a stir. Serve immediately with whipped cream and raspberries on top. You can also garnish it with dried rose petals.
