  • Wash the apples thoroughly and scrape off any wax using a knife. Finely chop them using a chopper—no need to peel! 👩🏽‍🍳 Chef Tip: Transfer the chopped apples to a bowl with a splash of lemon juice to prevent browning. Let them sit while you prepare the mousse.
  • In a mixing bowl, add softened cream cheese, sour cream, and sugar.
  • Use an electric hand blender to beat the mixture until light and fluffy. Don’t forget to scrape down the sides to ensure everything is well combined.
  • Strain the apples and add them to the mousse mixture along with chopped pistachios (reserve some for garnish).
  • Using a silicone spatula, gently fold the mixture until everything is evenly incorporated.
  • Spoon or pipe the mousse into small jars or bowls. Refrigerate for at least 2 hours. Cover with cling wrap until ready to serve.
