To Prepare The Indian Street Corn
Shuck the corn. Melt the butter (either in the microwave or in a saucepan). Transfer to a bowl and set aside.
Preheat your grill to medium high. Grill the corn with the lid closed turning occasionally until the corn is charred and cooked. The amount of charring is a personal preference (some prefer light, while others prefer well done). Alternatively, you can also Air Fry them. Preheat the Air Fryer to 400 degrees F. Then place the corn in the air fryer basket and air fry for 12-15 minutes or until lightly charred, flipping halfway through.
Remove the corn from the grill and immediately brush the corn with the melted butter Make sure the corn is coated fully. This will help the rub better adhere to the corn.
Cut the lemon into wedges. Dip the lemon wedge in the spice rub.
Rub it all over the corn to coat it. (Be cautious here – lest it become too sour).
