Mango Cranachan Dessert

  • Melt butter in a pan and toast the cornflakes till they are crispy. Also add freshly crushed black pepper to it. Transfer the cornflakes to a small bowl.
  • In another bowl, add mango pulp. To that add finely chopped mangoes. Mix it all together and keep it aside. You can also store this in the fridge to chill.
  • In another bowl, add heavy whipping cream and powdered sugar. Using an electric beater or whisk, beat the batter till it forms stiff peaks.
  • Add half of the cereal to this bowl and mix it together. You can also chill this mixture in the fridge till needed.
  • When you want to serve this mango trifle, take the bowls out of the fridge and begin to assemble.
  • In serving glasses, add a tablespoon of cornflakes. Add a layer of the mango mixture. Followed by a layer of cream.
  • Keep alternating between the two till you fill up the serving glass.
  • Top with toasted cornflakes and crushed black pepper. You can also dust some icing sugar on top.

Notes

Cornflakes taste better and are crunchy if they are lightly toasted. Keep tossing them around on medium flame till you hear the noise. Store the leftover cornflakes in an airtight container and use them as needed. Mix a little vanilla essence into the cream for some extra flavor instead if you like. Use good quality mango pulp. It should be sweet and smooth. You can also prepare fresh pulp using mangoes. Just grind it till it's smooth and creamy.
