Cookies come to the rescue on so many occasions. Be it midnight snacking, after school snack, breakfast on the go, an incentive for doing something good, or for leaving something sweet for Santa on Christmas Eve.
The cookie is a multi-faceted hero - and with such a "sweet" disposition too! Generally, I have a store of cookies in my cookie jar, for when little guests show up. Whenever my friend's son comes home, he heads straight to the jar and gets his tiny hands full. He even gives me instant feedback which I always love to hear.
Since we are vegetarians, all my cookie recipes are eggless but they or may not be vegan - though I do my best to offer vegan substitutes whenever I can. I am always trying out different cookie recipes and today's dessert's main ingredient is - Ferrero Rocher chocolates!
Ferraro Rocher Cookies
I feel Ferrero Rocher chocolates are the most common gifts that circulate during the holidays or festive season. I grew up in India and there, back then, these chocolates were considered exotic and were expensive. We got to eat them only on special occasions or if someone came visiting from the United States.
While I am not a chocolate person, I don't mind these crunchy chocolates with gooey centers. BTW, the chocolate layer that surrounds the hazelnut in the middle of each Ferrero Rocher is Nutella. But yes, Ferrero Rocher chocolates are very popular across the globe!
In fact, this dessert recipe was the result of a box of Ferrero Rocher gifted to us! So it really is a great way to use these chocolates and create something new out of them! These light and crispy whole-wheat Ferrero Rocher cookies are the perfect answer to your cravings! Yet despite their wow factor, these cookies are actually really simple to make!
I feel these cookies are a great way to incorporate Ferrero Rocher chocolates into a dessert! In fact, you can also ask your little ones to help you with making these decadent and indulgent cookies!

Ingredients needed
Flour -I have made this once each with all-purpose flour and whole wheat flour and both versions turned out great!
So feel free to use whatever flour you have available to you at the moment.
Ferrero Rocher Chocolates - One small box containing 12 of these chocolates should be enough.
You can easily get them at Costco, Amazon, or Walmart. Actually, around the winter holiday seasons, Costco has good deals on large packs of Ferrero Rocher chocolates.
Sugar - Preferably use fine sugar or caster sugar.
Any neutral vegetable oil or butter can be used in this recipe.
Other essential ingredients are - cornstarch, Kosher salt, vanilla extract, baking soda, and a little milk if needed.
How to make it
In a mixing bowl, sieve and add all-purpose flour, cornstarch, baking soda, and salt.
In another bowl, cream the sugar and oil until the sugar dissolves. Add vanilla extract and mix until smooth.
Now add the flour mixture to this in three parts, stirring well until just combined after each addition.
Crush Ferrero rocher chocolates in a grinder. You can even hand-chop them. Add this to the mixing bowl.
Mix and add some milk if required to get the desired cookie dough consistency.
Preheat the oven to 350° F. Line a cookie tray with parchment paper and place tablespoon-sized balls of dough evenly onto the prepared baking sheet. You don't need to flatten them. They will spread.
Bake for 15-20 minutes. When done, the cookies would have spread a little and the edges would turn golden brown. Just remember, every oven is different. So please use personal judgment and adjust the baking time as you think appropriate.
Serving Suggestions
Take it out from the oven and allow it to cool for a couple of minutes before you start gorging upon them. They will also harden as they cool. Always move them from the cookie tray to a cooling rack, else they will continue to bake if they stay in the hot tray. You can also sprinkle sugar over it while it's still hot for extra sweetness. I prefer it without the extra sugar.
If you want, you can also drizzle some melted chocolate on top. But I prefer these eggless cookies plain! These Ferrero Rocher cookies are super delicious and addictive. You will not be able to stop at one. The chocolate pieces that we sneaked inside the cookie burst into your mouth in the first bite itself.
I like my cookies to not be overly sweet and this one is perfect for my palate with balanced flavors. And nothing beats the aroma of freshly baked cookies! My cookie jar is all filled up now and we couldn't be happier! Bake these delicious Ferrero Rocher cookies for yourself and enjoy them along with your evening tea/coffee/milk.
Top recipe tips
Stick to the measurements provided. Rice flour makes a great substitute for corn starch. You can use butter instead of oil.
If using butter, it should be starting to soften but still be slightly cool to the touch. Also, if using salted butter, skip adding salt separately.
If adding salt, then Kosher salt is a great salt for baking with. The small crystals dissolve easily and evenly season the dough.
Feel free to use any other variety of sugar like brown sugar, cane sugar, or even jaggery powder. I have only made these cookies using the regular white sugar though.
It is important to add the dry ingredients in batches. If the flour is added all at once, the dough can become stiff and difficult to mix together.
The more the flour and liquid are mixed, the more gluten will develop, creating a dense cookie.
Adding the flour in batches also ensures the dry ingredients get evenly dispersed. So never add all the flour in one go!
Don’t over-mix the cookie dough. Whipping too much air into the dough will cause your cookies to collapse as they bake.
Want to save this recipe?
If the cookie dough is not firm enough to hold its shape, then try chilling it in the fridge for 15-20 minutes.
Use the small-sized ice cream scoops to scoop out the cookie dough and to get even cookie shapes.
Never place cookie dough balls directly onto a hot baking sheet. Always place them on a parchment paper or silicone mat.
When baking in batches, let the baking sheets cool to room temperature first or use different trays.
Also, use the same kind of Ferrero Rocher Chocolates and not the assorted variety as that will mix up the final flavors in this dessert.
To make them vegan
Unfortunately, Ferrero Rocher chocolates are not vegan. They contain milk and butter. However, nowadays, you do get vegan Ferrero Rocher chocolates.
Or you can simply swap it with any vegan chocolate truffles or dark chocolate coated hazelnut. Also, use dairy-free milk if needed. Otherwise, the recipe is vegan.
Storing these cookies
These eggless whole wheat cookies stay good in an airtight container for a week.
You can also freeze these homemade eggless whole wheat cookies for 3-4 months. After baking, allow cookies to cool completely.
Then place them in a single layer on a parchment-lined baking sheet to freeze them. Now store them in a freezer-safe zip-top bag labeled with the name and date.
Storing the cookie dough
You can definitely freeze the cookie dough. Place the solid and cold cookie dough balls into a labeled zip-top bag.
Label the bag with the month and the baking temperature and then place the bag in the freezer. You can freeze it for up to 3 months.

I just baked these and they are 2 to 3 times better than eating a ferrero rocher itself. I get too many from gifts every year and this cookie recipe makes it easier to consume quicker.
I used ½cup of caster sugar & ¼cup of brown sugar. Crispy crunchy on the outside, soft inside & not too sweet.
