Similar to Nimbu Pani
I have obviously made the regular lemonade/nimbu pani before so I figured this one would mean adding cucumber to it. I never imagined that this drink would taste so good.
This drink is a spin-off of the Indian lemonade as known as Nimbu Paani. Nimbu means lemon in Hindi and pani means water. This drink was our savior back in India, especially in summer.
Every house would make it fresh nearly every day and all would quench their thirst with this cool drink. My mom would make it with fresh lemons, sugar, salt, and water.
A very basic recipe that would be ready within seconds and be 100% delicious. We would look forward to coming home after playing in the morning sun to a chilled glass of lemonade.
Cucumber is the soul of this drink
Did you know that cucumber is not a vegetable but a fruit? Cucumbers are low in calories and contain a good amount of water and soluble fiber, making them ideal for promoting hydration and aiding in weight loss.

Cucumbers - I have used fresh mini cucumbers. But you can also use the regular ones that don't have too many seeds in them.
Lemon juice - You can either use store-bought lemon juice or freshly squeezed lemon or lime juice.
Mint - This gives this lemonade a refreshing flavor and color. It also adds a delicious herbal flavor.
Jalapeno - The hot jalapeno gives this drink a kick and an extra zing. That tingling sensation you will feel when you take a sip of this drink is the jalapeno talking!
Black Salt - It's a cooling spice, that helps to lower the body heat. Lots of Indian summer recipes have this as a key ingredient for this very reason.
Sugar or simple syrup and soda are optional. Use if needed.
How to make it 🔪
- Just roughly chop the cucumber after peeling it. Also roughly slice the jalapeno.
- To a blender, add freshly squeezed lemon juice
- Then add the mint leaves and sliced jalapeno.
- Followed by black salt, chopped cucumbers, and water. You can add ice cubes and sugar (optional) as well.
- Blend it smooth.
- Strain it if you want. Transfer this lemon cucumber mint water to a bowl and let it chill in the fridge.
Serving suggestions 🍽
Add ice cubes or crushed ice to a serving glass. Fill one-fourth of the glass with soda (if using) and then pour the chilled lemonade to fill up the glass.
Pro Tip - Serve this non-alcoholic drink for your house party on St. Patrick's Day! Convert this to a fun cocktail by adding some vodka or tequila.
Top recipe tips 💭
Substitute black salt with regular salt. Add one or two teaspoons of sugar or simple syrup while blending to help balance the flavors. If you find it too hot, use only half a jalapeno.
You can also throw in some cucumber, lemon, and jalapeno slices to make this lemonade more visually appealing.
Straining is optional. Strain if you like your drink to be clear and smooth. Always serve this mint cucumber lemon water chilled.
Recipe FAQs 📖
They're almost identical nutrition-wise and share many of the same health benefits. Both lemons and limes are acidic and sour to taste.
However, lemons are sweeter, while limes have a more bitter flavor. You can use either of them in this recipe.
Instead of fresh fruits, you can also use store-bought-ready juices to make this delicious lemonade.
If making for children, then please skip adding the jalapenos or use your own discretion on how much to add.
This lemonade can easily be made ahead of time and stored in the fridge for 4-5 days. Use a pitcher with an airtight lid.
Do not add ice cubes if you plan to serve the drink later. Add them just before you serve else the flavors will get diluted.
Bonus tip - Pour this into Popsicle molds and enjoy them as Ice Pops on a hot day!
