Bombay Sandwich - Favorite Street Food
This Indian-style club sandwich is one of the most popular Indian street foods. My love affair with it began years ago. If I can remember correctly, I pretty much had it every day of my college-going life! My friends and I would always stop at this food joint right outside our college after a long day before we headed back home to enjoy one of our favorite snacks: Bombay Sandwiches.
Although you will find sandwiches being served even in the restaurants, there is a constant joke that the restaurant ones only have cucumber and tomatoes. Whereas the street food joints serve it with more veggies and sauces which makes it taste way better! Masala Chai and this desi dish make a great combo, especially for an evening snack! This dish is a departure from your everyday vegetable sandwich.

Aloo Masala - First, we need to prepare the potato or aloo masala.
Cooked Veggies - Boil, peel, and thinly sliced beetroot.
Raw veggies - Thinly slice raw cucumbers, tomatoes, and onions.
Sandwich Masala is an optional ingredient.
Bread - You can use any sliced bread available to you. However, it tastes more authentic when plain white bread is used.
Butter - Use any flavored or plain plant-based butter. You can skip this if you want to make this an oil-free vegan snack.
Cheese - This is again optional.

Making this plant-based snack is very easy once all the prep work is done. Now let's assemble this vegan sandwich. If you are making the aloo masala from scratch, here's is what you need to do.
- Boil potatoes and peel the skin when done. Mash them with a potato masher.
- Transfer it to a bowl, add any chopped greens you like spinach, kale, or beet leaves to it.
- Add garlic powder, ground turmeric, cumin powder, garam masala, amchur powder, chaat masala, and salt.
- Mix it all together and use it as stuffing.
- First, spread butter (if using) and then green chutney over the bread slices. Sprinkle some lemon juice over the chutney. I learned this little trick from my local street food vendor.
- Then add a spoonful of potato masala and spread it evenly on the bread.
- Then place cucumber slices over it in a layer.
- Followed by tomato slices.
- Then add the beetroot slices. Sprinkle sandwich masala or chaat masala.
- Next, add the onion slices. Add grated cheese on top if you want and close it with the other bread slice that's smeared with chutney as well. Place them in a Panini maker or a sandwich maker and grill them. Once you get the grill marks on the bread, take it out.
Serving suggestions 🍽
Cut into slices and serve with some chutney and ketchup on the side. Serve this toasted Bombay sandwich for breakfast, lunch, evening snack, or dinner! This plant-based snack is very filling and appetizing to taste. Just one sandwich can keep you satiated for a couple of hours.
Top recipe tips 💭
You can do all the prep work in advance or the night before - making the aloo masala, boiling the beets, and making the chutney.
Making of the aloo masala can be skipped and you can make it using just the sliced veggies.
If doing it this way, boil and peel potatoes, slice them, and add them like you add other sliced veggies.
That will make it a no-cook and oil-free recipe (if you skip the butter too). While white bread tastes best here, feel free to use any multigrain or whole wheat bread.
Instead of green chutney, you can also use pesto sauce or hummus. In veggies, you can also add sliced bell peppers for more flavor.
In fact, you can add or skip any veggies you want. Just ensure they are fresh and crunchy. Use chaat masala if Sandwich masala is not available.
Both can be found on Amazon or at any Indian grocery store. In case you don't have both, use cumin powder and salt. Use regular butter or any dairy-free butter.
Feel free to skip adding cheese or use vegan or regular grated cheddar cheese.
If you don't have sandwich masala, you can try sprinkling some black salt on the sandwich to raise its flavor profile.
You can also enjoy this Indian sandwich without grilling it. It tastes great even when served cold.
Also, it's important to make them fresh and serve immediately, else they will become soggy.
