This sandwich features the simplest of ingredients that are easily available at your nearest Publix - bread, potatoes, and cheese! Not only that, but it's also a breeze to make. Enough of those everyday boring sandwich recipes. Instead, put together this cheesy sandwich and you will not be disappointed!
Publix - grocery shopping was never this much fun!
Publix is my go-to place for groceries. I love their stores - so big, airy, and clean. Every Sunday, my husband and I make a trip to our local Publix. It's one of the ways, believe it or not, that we spend time together.
I plan the menu for the upcoming week and make the grocery list. My husband, being in charge of getting the household items (batteries, AC filters, cleaning supplies, etc.) compiles his own list. Once the lists are done, off we go.
Our first step is to check out the coupon and savings booklets, including the Extra Savings flyer, at the store entrance. We scan for whether any items on our list are on sale. We then get everything on the shopping list. Once we're done, we start a tour of the aisles and the bakery.
Publix has such a large selection of items, it's fun to 'window-shop'. Occasionally, we make the odd impulse purchase - but usually, we stick to the list. We especially love the Publix bread - it's so soft, tasty, and fresh! We always prefer it over the packaged stuff. It's our go-to bread for making sandwiches.
Once we're done, we head over to the checkout counters, where the ever-helpful staff ring us up and pack our items in our reusable (say no to plastic!!) Publix bags. It's such a fun experience. Both hubby and I look forward to our Publix trip each week. If you haven't visited Publix before, I would urge you to go visit. You won't be disappointed, trust me!

How to make it 🔪
How to boil potatoes and tips
Boiling potatoes is an essential step in this recipe. Since we need mashed potatoes in this recipe, boiling them makes it easy. Starchy potatoes like Russets or Waxy or all-purpose potatoes are the best varieties for boiling. It's recommended that you boil potatoes with the skin on. This keeps the nutrients inside the potato during the cooking process.
You can use both stove-top and microwave methods to boil potatoes. Microwave method - In a microwave-safe bowl, add water and potatoes. Microwave it for 13-15 minutes. In a pressure cooker, add water and potatoes. Cook it on a stovetop for 3-4 whistles. Adding salt while boiling is a personal preference.
Potatoes will cook more quickly if you cut them up into chunks before boiling. Peel the skin once the boiled potatoes cool down. Be careful to not overcook the potatoes or you’ll end up with a soggy mess and little flavor. Potatoes are done when you can slide the tip of a knife or fork all the way through without resistance. It’s important to drain the potatoes immediately after cooking.
Now that the mashed potatoes are ready. It's time to season them and make some yummy Potato Cheese Sandwiches.
- Transfer the mashed potatoes to a bowl.
- Add spice mixes like onion powder, cumin powder, turmeric, garam masala, and mixed herbs
- Then add minced garlic, dried parsley, and jalapeno along with salt.
- Mix it all together.
- Spread I Can’t Believe It’s Not Butter over Publix bakery Homestyle White Bread slices.
- Spread a generous amount of seasoned mashed potatoes over it.
- Smear it with green chutney.
- Arrange Borden Singles Cheese slice over it and close the sandwich.
- Grill until lightly browned in a Panini Maker.
Serving suggestions 🍽
Serve these sandwiches with a side of ketchup, chutney, and some Cheez-It Snap’d for that extra crunch. This sandwich is great for breakfast, school lunch boxes, and evening snacks.
Top Recipe Tips 💭
I have used russet potatoes for this recipe. Cook the potatoes until they are soft. Then grate or mash them with a masher. Feel free to add the seasonings of your choice. Keep it mildly spiced if making it for children. You can use fresh herbs instead of dried herbs. Green chutney can be substituted with pesto.
Add sliced veggies like onions, bell peppers, or even avocado before adding the cheese slice to make it heartier and more flavorful. If you don't have a Panini maker, you can make this on the stovetop as well.

- 4 potatoes
- ½ tablespoon onion powder
- ½ tablespoon cumin powder
- 1 teaspoon turmeric powder
- ½ tablespoon garam masala
- 1 tablespoon mixed herbs
- 5 cloves garlic
- 1 jalapeno
- 2 tablespoon dried parsley
- salt
- 8 slices Publix bakery Homestyle White Bread
- 2 tablespoon Spread I Can’t Believe It’s Not Butter
- 3 tablespoon green chutney
- 4 nos Borden Singles Cheese Slice
Instructions
- Boil potatoes.
- Transfer the mashed potatoes into a bowl.
- Add spice mixes like onion powder, cumin powder, turmeric, garam masala, mixed herbs
- Then add minced garlic and jalapeno along with salt.
- Add dried parsley and mix it all together.
- Spread I Can’t Believe It’s Not Butter over Publix bakery Homestyle White Bread slices.
