    These savory vegan waffles made with gluten-free hummus & mashed potatoes are crispy & delicious. Serve these easy, no-egg waffles for breakfast or brunch. In my opinion, these are the best waffles you can have! The texture is exactly what I’m looking for in a waffle. They’re perfectly crisp on the outside, with a warm soft center!

    I am a sucker for savory vegan breakfasts! I always end up making savory treats over sweet ones for brekkie or evening snacks. Which is why I am always creating new and exciting savory vegan recipes that can be served as a meal at any time of the day. I wanted to create a crispy waffle recipe ever since I got my new waffle maker. 

    But wait, can vegans eat waffles? Of course, you can! There are many store-bought vegan waffle mixes available or you can make it at home as I do. Be it breakfast, brunch, dessert, or even dinner, indulging in a plate of sweet or savory fluffy waffles is one of the best ways to treat yourself. You don't need eggs or dairy to make them either, hearty vegan waffles are easy and you won't even notice the difference in the taste. They are very easy to make.

    I created this recipe purely as a way to use leftovers! But now, I am so glad that I did. In the bargain, I got a keeper! This recipe features in my weekly rotation at least once a month if not more times. The fact that they are so easy to make, makes it my go-to recipe when I am pressed for time. Plus it's a recipe that is loved by all. Why don't you surprise your mom by making this for her this mother's day?

    There are many reasons to try this vegan waffle recipe. Read on to know them.

    Why I love this vegan waffles mix!

    If you are looking for savory breakfast ideas or how to make easy vegan waffles, then this recipe is for you!

    • It is a 100% customizable recipe. You can tweak it as per your liking. 
    • They are no-egg waffles. That means you don't need eggs to make these waffles.
    • It's a great recipe using hummus or a way to use leftover hummus. 
    • They are dairy-free waffles.
    • Makes for a great savory vegan breakfast recipe.
    • You can also serve these waffles for dinner.
    • It can be made within 30 minutes. 
    • The waffle batter can be made in advance and stored in the refrigerator. 
    • The batter stays good for a week in the fridge. 
    • You can also make savory pancakes using this batter. 
    • They are loved by kids and adults.
    • Great way to use mashed potatoes.

    How to make Mashed Potato Waffles?

    It is a fairly easy recipe and can be made within minutes. Easy savory vegan snacks like these when served are sure to make your dining table an inviting sight! So, here is how to make vegan waffles from scratch. 

    1. In a bowl, add boiled potatoes and mash them with a fork. Alternatively, you can even grate them. 
    2. Then add any vegan herb butter (I added THIS) and crushed pepper.
    3. Next, add any hummus available to you. I used gluten-free hummus.
    4. Then add Italian seasonings and dried cilantro.

    1. (5) Now add the all-purpose flour and rice flour to another bowl. You can also use gluten-free baking flour here.
    2. (6) Followed by vegan buttermilk. You can check out how to make dairy-free buttermilk here. 
    3. (7) Then add garlic powder, crushed black pepper, and salt. Add the potato mixture as well. Mix all these together and make a thick batter. 
    4. (8) Preheat the waffle maker, with a cooking spray grease the molds and pour a ladle full of batter onto the waffle maker.
      • You can grate vegan cheese on top if required.
      • Cook as per the maker instructions.
      • Once it gets the desired brown color, take them carefully. 

    Serving suggestions

    Top these buttermilk waffles with chopped onions and bell peppers for extra flavor. Then you can serve these instant mashed potato waffles with some Sriracha vegan mayo, ketchup or chutney on the side.

    What goes with waffles for dinner?

    Serve these no-egg waffles with a side of fruit salad, Cucumber Salad or a bowl of yogurt. You can also serve them with avocado, pesto or salsa!

    Tips to make the best veg waffle recipe

    • Choose the right kind of potato for this potato waffle recipe. Choose higher starch potatoes like Russets or Yukon golds for the fluffiest, smoothest, and most flavor-packed mash.
    • You can either mash it with a masher or grate it. Both works fine here. 
    • If you don't have any herb butter, use any plain regular or vegan butter. 
    • You can use any hummus in this recipe. I have used the regular chickpea hummus. 
      • Can use either homemade or store-bought hummus
    • Add any variety of dried herbs available to you. You can also add fresh herbs like chopped parsley or cilantro.
    • I have used all-purpose flour, but you can use any other flour like whole wheat flour or chickpea flour. 
    • Adding rice flour is key here. This is what ensures crispy waffles. 
    • You can also use the store-bought waffle mix to make this recipe.
    • Feel free to add more veggies to the batter like grated zucchini, carrots, onions, bell peppers, etc to make it more healthy.
    • If not vegan, then you can use regular buttermilk or chaas in this recipe.
      • In case you don't have buttermilk, use water.
    • Garlic powder is for extra seasoning. Skip if you don't have or use minced fresh garlic. 
    • You can also add baking powder to the batter to make it more soft and fluffy.
      • If you do add it, allow the batter to rest for 10 minutes. 
    • Topping it with cheese is optional. You can use regular or dairy-free cheese. 
    • This recipe calls for a waffle maker. If you don't have one, you can use this batter to make regular pancakes. 
    • If using a waffle maker, cook them till they turn golden brown. be careful to not burn them.

    to make the waffle batter

      Followed the recipe (except for using regular buttermilk & besan). They turned out super soft in the waffle maker and could not remove them. What did I do wrong? Ended up making pancakes; tasted great, was a hit with the kids too 🙂

        Yes, you can use the batter to make pancakes as well. But did you add any other flour if not besan? If you skip buttermilk and added water instead, that should not have made much difference. But without besan, there would be no binding.

          I only added besan & rice flour. Would have loved to have crispy waffles.

            Normally if you add rice flour, they turn out crispy. I have made this many times with no issues. Some things I can think of are - ensure the waffle maker is hot when you add the batter. That starts the cooking process immediately. Also, try adding milk/buttermilk along with water to make the batter. Hopefully, that should work.

        You can add a teaspoon. Add it just before you are ready to make the waffles.
