It's a creamy strawberry cheesecake made into a Popsicle with crushed granola base. They taste just like biting into a real cheesecake minus the calories.
Guests do one thing best...arrive unexpectedly! In such a scenario, all the hosts can think of is what to cook depending on what is there in the pantry. And if they come with kids then the pressure to serve an interesting dessert is all the more. While I am rarely in this situation when in the US because here, one hardly arrives at someone's house unexpectedly. Evites are a must! But this is not the case in my home country India. We always seem to have visitors who show up unannounced!
When we were kids, I could have sworn that I had seen more visitors at my neighbor's house than the family actual members at any given time! Their house was always filled with guests, some would come over for a casual chit-chat over tea whereas some would be overnight guests. Their kitchen would be running round the clock and the ladies of the house would do their chores selflessly and with a smile. I cannot imagine my life, like that, but I love my guests and wait eagerly for someone to stop by. I enjoy playing host and cooking up different dishes for my family and friends.
I made these Strawberry Cheesecake Popsicle for two reasons. One of our friend's daughter fell down and fractured her hand. I was feeling bad for her and asked her if she wanted me to make her some Ice Pops to which she replied that she would love to have a pink Popsicle. Therefore it had to be something to do with strawberry. The other reason was, my childhood friend along with her two kids were visiting us from New Jersey. She had told me that her kids love Popsicle and desserts. My guests were arriving soon and I knew what to make for them.
I thought this recipe is perfect as it's a dessert in a Popsicle. Here is how you need to make it. Coarsely grind granola with butter to get a crumbly texture. Keep it aside for now. In a blender, add cream cheese, yogurt, milk, sugar, and strawberries. Blend to a smooth consistency.

Pour this into Popsicle molds and top it with crushed granola. Freeze for 5-6 hours. Serve chilled. They are creamy, sweet, and dreamy! This became an instant hit with the kids. and would insist on having more than one all the time. Even KR loved it and was not too happy to be sharing it with the kids. 🙂 He made me promise that I would make this again for him which I obliged happily. I was just glad that my guests and husband loved these frozen summer treats. Now you too know what to make the next time you have some guests over!

Strawberry Cheesecake Popsicle With Granola
Equipment
Ingredients
- ¾ cup granola
- 1 tablespoon melted butter
- 8 oz cream cheese
- ½ cup yogurt
- ½ cup milk
- 1-2 tablespoon sugar
- 8-10 strawberries
- 6 Popsicle molds
Instructions
