Whip up this delicious instant mousse with apples, pistachios & cream cheese! It’s simply an irresistible holiday dessert made using just few ingredients.
Before you know it, the holiday season will soon be upon us! I have some very interesting recipes lined up in the coming weeks to help you celebrate the festive season in full swing. For us, Indians, beginning next week we have all our major Hindu festivals lined up one after the other starting with Karadaiyan Nonbu – a festival for married women across South India followed by Raksha Bandhan where sisters of all ages tie a talisman, or amulet, called the rakhi, around the wrists of their brothers, symbolically protecting them. The brothers in turn also vow to protect their sisters at all times and give them gifts in exchange of the rakhi. Traditionally, this festival is celebrated grandly across India except the South of India and we are South Indians. But that didn’t stop us from celebrating this festival.
Living in a cosmopolitan city like Bombay made that happen. When we as kids saw the whole city celebrating this day with so much vigor, I insisted that we celebrate this day too. Our parents agreed instantly and ever since, I have been tying a rakhi to my younger brother. Mom would always make Paal Poli for dessert every Raksha Bandhan which we would devour. I promise to share this dessert recipe soon. Now that my brother and I live in different continents, it’s difficult be together during the time of the festival. We have to settle for rakhi and gifts shipped via Amazon and video calls. It’s no the same at all but what else can one do. The same is the case with KR and his sister. But this year things are a bit different. His sister is visiting us and will be here during this festive time.
To make this day extra special for KR and his sister, I have planned an exotic spread on the festive day. For dessert, I made a trial batch of this Apple & Pistachio Mousse to test it out and we simply loved it. Now I know for sure what I am serving for dessert on Raksha Bandhan. This is the first time I made mousse at home although I have had it many times at restaurants and parties. It is perfect for a festive dinner party as you can make it ahead of time. Since it is made in individual jars or bowls, it is easy to serve. Sounds perfect, right? KR has a sweet-tooth and is always craving for something sweet after a meal. This Apple & Pistachio Mousse is the ideal after meal sweet treat because its light, airy, creamy, crunchy and is mouthwatering to taste.
The additional flavors of saffron and pistachios gives this mousse a shrikhand flavor. Now let me walk you through the recipe on how to make this mousse. First step is to wash the apples well and scrape off the wax on them with a knife. Chop them finely using a chopper. Transfer it to a bowl and add lemon juice to it. Let the apples rest in there till you prepare the mousse. In another mixing bowl, add softened cream cheese along with sugar. Then add Kesar Pista powder and lite sour cream. Using a hand blender, beat the mixture till light and creamy. Then strain the apples and add them to this bowl. Add chopped pistachios and the fold in the mixture. Portion into small bowls or glass jars. Place them into the refrigerator and allow it to chill for 2 hours. Before serving, garnish it with some chopped apples, saffron strands and chopped pistachios. This is one dessert that you can make all year round.

- 16 oz sour cream
- 3-4 tbsp pista
- 1 tsp saffron strands
