About this wonder fruit
Fun fact - It derives its name from Raspise, "a sweet rose-colored wine"! With the raspberry season upon us, this is the right time to make high protein vegan snacks like these! You must always pick good quality organic fresh/frozen raspberries for any recipe. Raspberries that are spoiling will typically become soft and mushy and their color will deteriorate; discard such raspberries if mold appears or if the raspberries have an off smell or appearance. We don't want them.

Top tips for making this recipe
I recommend using frozen raspberries in this recipe because they produce this gorgeous vibrant pink color that no one can resist! When using frozen raspberries, remove them from the freezer 15 minutes before you start making this recipe. You can use fresh raspberries as well. You can use shredded coconut, unsweetened desiccated coconut, or even freshly grated coconut. Fresh or dried dates can be used. You can also mix in some raisins or a little honey/maple syrup along with the dates for more sweetness.
Ensure the cashews are not stale. You can also add dry oats, nuts, seeds, nut butter in this recipe. If required, allow the mixture to firm up a bit in your fridge (about 10 minutes) before rolling into balls.
You can make this in advance and store it in the fridge in an airtight container. It stays good for a week. Make it in small batches that will last you for a week. If you wish to store for longer then you can freeze. You can eat them straight from the freezer or defrost them by popping them in the fridge overnight. The balls will soften at room temperature but will hold their shape. You can try this same recipe with frozen blueberries as well.

No idea what I did wrong but mine turned out brown! I ended up rolling some in cocoa and some in dessicated coconut to prevent them from being sticky, as they were already brown anyway and not the beautiful pink I was hoping for. Perhaps I'll try next time with lightly coloured raisins or dried apricots.

How long does it stays fresh? On room temperature? I think using moisture in energy bite is not a good idea
Priya says
I make it as and when I need in small batches. But it will be good if in fridge for a day or 2.

can we use any other berries like blueberry or strawberrry
Priya says
You can try..it should work..I have not yet tried. But use frozen berries.

Can we also use fresh raspberries for this recipe?

Frozen ones give it better texture. Freeze fresh raspberries overnight and use them the next day. Hope that helps.
