Plant-based snacks are the most searched on my blog! That is why I thought of sharing this easy recipe of a perfectly sweet and seriously satisfying vegan snack that will be made on a repeat mode once you start having them! That is what has happened to me. I have always read about these pick-me-up kinds of plant-based snacks that are great to munch between meals, pre/post-workout, or satisfy those midnight craving, but never really got to make something for us. It also makes a yummy healthy breakfast to grab when running out the door in the mornings!

You must always pick good quality organic fresh/frozen raspberries for any recipe. Raspberries that are spoiling will typically become soft and mushy and their color will deteriorate; discard such raspberries if mold appears or if the raspberries have an off smell or appearance. We don't want them.

Ingredients needed

Making plant-based snacks like these are super easy because you need just 5 basic ingredients! 

• Frozen Raspberries - Remove them from the freezer 15 minutes before you start making this recipe. You can use fresh raspberries as well. 
• Coconut - You can use shredded coconut, unsweetened desiccated coconut, or even freshly grated coconut.
• Raw cashews - Use the plain, raw variety. 
• Dates - I have used dried dates but you can also use fresh Medjool dates. 
• Vanilla Extract for flavor

How to make it

The recipe is one of the easiest high protein vegan snacks you can make! Once you know how to make it, you will be making it every week. This is such a recipe that even children can help you ake it. You only need a food processor for this recipe. 

In the food processor add desiccated coconut, cashews, and dates.

Then add vanilla extract, a pinch of salt, and frozen raspberries. Pulse till the mixture is broken down, and is well combined and sticking together. Transfer it to a plate and using your hands, shape the mixture into tablespoon sized balls. At this point, you can leave it as is or roll it over some desiccated coconut. Place them in the fridge for 30 minutes to set.

It can be eaten for energy boost pre or post-workout. make this your healthy yet tasty midnight snack if the craving comes. Top tips for making this recipe

I recommend using frozen raspberries in this recipe because they produce this gorgeous vibrant pink color that no one can resist! When using frozen raspberries, remove them from the freezer 15 minutes before you start making this recipe. You can use fresh raspberries as well. You can use shredded coconut, unsweetened desiccated coconut, or even freshly grated coconut. Fresh or dried dates can be used. You can also mix in some raisins or a little honey/maple syrup along with the dates for more sweetness.

Ensure the cashews are not stale. You can also add dry oats, nuts, seeds, nut butter in this recipe. If required, allow the mixture to firm up a bit in your fridge (about 10 minutes) before rolling into balls. 

You can make this in advance and store it in the fridge in an airtight container. It stays good for a week. Make it in small batches that will last you for a week. If you wish to store for longer then you can freeze. You can eat them straight from the freezer or defrost them by popping them in the fridge overnight. The balls will soften at room temperature but will hold their shape. You can try this same recipe with frozen blueberries as well.
