Now, who doesn't love strawberries and marshmallows here? My recipe combines both of these to make a lip-smacking holiday dessert!
When you combine the two together, what you get is some incredible flavor!
So if you like marshmallows, especially the toasted ones, your taste buds will go crazy for this toasted marshmallow strawberry ice cream!
This super creamy, silky, smooth dessert is packed with the intense flavor of strawberries and gooey toasted marshmallows in every bite. Yum!
Why Karo Corn Syrup
I got this opportunity to create a new and fun recipe using Karo® Corn syrup and the first dish that came to my mind was - Ice Cream! Why?
Because there’s nothing like homemade ice cream. Especially, when it’s loaded with fresh strawberries and marshmallows. It’s just heavenly!
Having used Karo Syrup before, I knew that it has a smooth texture and just the right amount of sweetness that doesn't overpower other ingredients.
It was a perfect idea to make this frozen strawberry dessert with this Karo Corn Syrup because it pairs very well with marshmallows.
Why I love this ice cream
This ice cream has a naturally smooth and rich texture that will instantly melt in your mouth. This recipe has the word EASY written all over it!

The mini marshmallows bring a sweet flavor and softer creamier mousse-like texture to this dessert.
This frozen strawberry dessert is made using basic pantry staples. Here are the key ingredients needed to make it.
Strawberries - Fresh strawberries are preferred but you can also use frozen ones. If using frozen ones, then thaw them completely first.
Cream and milk - Since we are making dairy-free ice cream, you will need vegan cream and milk. Almond, coconut, or oat milk will work fine here.
Corn Syrup - Karo Corn Syrup is what we are using in this recipe because of its high quality. This Corn syrup helps maintain a softer consistency of the ice cream.
Marshmallows - Vegan varieties are easily available in all leading grocery stores and on Amazon. Use mini marshmallows as they are easier to eat.
Besides all these ingredients, you also need an Ice Cream Maker, Brulee Torch, and an ice cream container for this recipe.
The first step is to prep the strawberries. This is what you need to do for that.
- Slice fresh strawberries in half and transfer them to a mixing bowl.
- Add sugar and lemon juice, mix and set it aside for 2 hours.
- Using a masher, crush the strawberries well. Keep it in the fridge for now.

Once the strawberries are done, the next steps come together very quickly.
- Add any dairy-free milk and cream to a mixing bowl.
- Next, add sugar to this.
- Add Karo corn syrup and vanilla extract.
- Give it a mix. You can also use a hand blender to do so.
- Then add the crushed strawberries to the bowl.
- Mix it all together. Chill this bowl in the refrigerator for an hour.
- Place mini marshmallows in a tray and toast them using a torch. They must turn golden brown. You can also broil them in the oven.
- Add these toasted marshmallows to the bowl and mix it in. You can also add them once the ice cream is churned.
- Then, transfer this mixture to an Ice Cream Maker and churn according to the manufacturer’s instructions.
- To check if its done, insert a spoon to check if it leaves an indent. Stop churning when it does.
- Pour mixture into a freezer-safe container. Put the ice cream into the freezer immediately.
- If you wait too long, the ice cream will begin to melt and can lead to ice crystals.
- Chill for 2 hours for a mousse-like texture or a full 4-6 hours for a firm, ice cream-like texture.
This vegan strawberry ice cream tastes great by itself. Serve 1-2 scoops in individual bowls and serve chilled.
However, you can serve this frozen strawberry dessert in waffle cones with some choco chips on top.
Some more topping suggestions are - roasted marshmallows, chocolate/strawberry syrup, whipped cream, sprinkles, graham cracker crumbs, or crushed granola.

You can use it to make Milkshakes, Sundaes, Cakes, or Cookie Sandwiches, or even Tacos!
Put the canister into the freezer a day before you start making ice cream. Only take it out when everything is prepped and ready to go. Otherwise, it will start to defrost.
Use chilled milk and cream in the recipe. You can also substitute strawberries with any other berries or pineapple.
Chilling the ice cream mixture before adding it to the ice cream maker helps create the best ice cream consistency.
Ice cream stays softer when you store it in a shallow container, rather than a deep tub, and covering it with a plastic wrap helps to stop the ice crystals from forming.
Place the ice cream on the bottom of your freezer, towards the back, where it is the coldest.

Don't have an ice cream maker?
Whip heavy cream until fluffy stiff peaks form and then simply mix all the other ingredients together as per the recipe.
Not vegan?
You can totally make this strawberry marshmallow ice cream using regular full-fat milk and heavy cream.
How to get the perfect scoop?
Let the marshmallow ice cream rest at room temperature for about 5-10 minutes. Dip the ice cream scoop in hot water and then try scooping the ice cream.
Pre-scooping ice cream also helps when serving a crowd. Line a baking tray with parchment paper and scoop out the ice cream and freeze it. This way you have individual scoops ready!
This ice cream stays good for 2-3 months if stored properly in the freezer.
