First make a paste of garlic, ginger, green chillies and almonds and set aside. Boil soy nuggets in water with salt and turmeric powder. Drain and squeeze out the soy chunks and keep aside. Heat ghee in a pan. Temper mustard and cumin seeds. Then add chopped onions and saute till they become translucent. Next add the ground paste and cook it till the raw smell goes away. Add tomatoes and tomato puree along with salt. Saute it till the tomatoes are cooked.
Add seasonings like Homemade Turmeric Powder and chilly powder. Then add the soy chunks and cooked basmati rice. Give it all a good mix. Adjust salt as required. Garnish with cilantro if you want to.
Tomato Soy Rice Pilaf is now ready.
The rice should be fluffy and the grains should be separated. All the masala should be well coated to the soy chunks and rice. That is the true essence of pilaf.
