Pistachios & Dill flavored Turmeric Brown Rice

Pistachios & Dill flavored Turmeric Brown Rice is comfort food. Cooked in South Indian style, this vegan rice pilaf has a unique blend of pistachios & dill leaves along with other Indian spices which is mixed with aromatic turmeric brown rice. A great brunch recipe!

INGREDIENTS

  • 2 cups Saffron Turmeric Rice - Refer recipe
  • 1/2 cup pistachios
  • 2 tbsp ghee
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 2 tbsp chana dal
  • 1 tbsp urad dal
  • 4-5 dried red chillies
  • 4-5 curry leaves
  • 1 large onion
  • 1 bunch dill leaves
  • 2 tbsp sambhar powder
  • 1/4 cup lime juice
  • Salt as required

INSTRUCTIONS

  • First step is to make Saffron Turmeric Rice using brown basmati rice. Allow it to cool down a bit once done. Meanwhile, lightly toast the pistachios and coarsely chop them. Heat ghee in a pan. Temper with mustard seeds and cumin seeds. Once they crackle, add chana dal and urad dal. Saute till they turn light golden. Then add curry leaves, dried red chillies and sliced onions. Continue to saute till the onions turn translucent. Now add the chopped dill leaves and sprinkle some water all over it. Cover and continue to cook for another 12-15 minutes. Keep stirring in interim. Then add sambhar powder to the pan along with salt. After a minute, add the cooked yellow rice and salt. 
    Mix it all together and cook it for a minute. Next add the chopped pistachios, mix and take it off the flame. Then add lime juice to it. That completes this delicious dish!
