Mini Veggie Fritters

A healthy vegetarian breakfast ready in 5 minutes! It has the nutrients of veggies and protein from the eggs to make this a power breakfast option.

  • 7 tbsp maida/all purpose flour
  • 1/4 cup shredded cheddar cheese
  • 2 eggs
  • 2 tsp garlic powder
  • 2 jalapeno peppers finely chopped
  • 4 to matoes finely chopped
  • 1/2 cup chopped mushroom
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped spinach optional
  • Salt and oil as required


  • In a mixing bowl, add all the ingredients except oil. Mix to form a thick batter. Heat a skillet. Pour a spoonful of batter and spread it over the skillet. Drizzle some oil around it. Cook them evenly on both sides. Serve them hot with any tomato sauce or chutney.


You can add other veggies in it too as desired.
I forgot to add a tbsp of oats flour and flax seed powder, you may do so to make it more healthy.
You can make this egg-less as well. Substitute it with little milk and water or add chickpea flour.
