All of us at some point have fallen back on frozen dinners. Maybe it was a long, tiring day or maybe we’re not in the mood to cook. Whatever the case may be, it’s always good to have frozen products in one’s freezer in case of emergency. While many of us would consider frozen foods to be not as tasty as freshly cooked food, I for one believe we’ve actually come a long way in the realm of frozen products. Just walk down the frozen foods aisle of Publix and you will find an immense selection of entrees, bread, ice cream, vegetables, fruits, yogurts etc. If you go one step further and read the nutrition label and the ingredient list, you will probably find some fairly good choices to take home with you. In fact, I encourage you, the next time you’re at Publix, to pick up their Extra Savings flyer and see what products are participating- you may find something you like! I’ve said this in my previous posts, but I shop almost exclusively at Publix. I love their store. It’s spacious, well-lit and clean. They have a large selection of products to choose from and the staff is always very polite and helpful. Every Sunday, I plan my weekly menu and then go to Publix for my shopping with my husband. We have fun going through every aisle and seeing what new products have arrived in the store. It’s very relaxing and a good activity to end the weekend.
Since we are talking about frozen/refrigerated foods, let me ask you this – if I put a tub of yogurt and a packet of bread in front of you, would it ever occur to you to make a ‘Yogurt Sandwich’? No, right? But let me tell you this, it tastes wonderful. This sandwich is an easy breakfast or snack recipe and a great lunch box recipe for both kids and adults. Plus given that this sandwich can be put together in just 10 minutes, it makes it a very viable snack option on busy days. It’s a great way to sneak vegetables into your kids diet as well. This colorful Indian style Spiced Yogurt Sandwich is extremely flavorful to taste. Yogurt can serve as a good source of probiotics. Some kinds of yogurt aid in digestive health.
For this recipe, I needed hung curd or plain, unsweetened Greek yogurt, and bread along with some other veggies. I headed to Publix where I picked up some Fage Greek Yogurt and some Three Bakers Bread needed to make this delicious Indian style Spiced Yogurt Sandwich. In fact, from 10/12/19 to 10/25/19 head to your local Publix for savings on a variety of products featured in their Cool Foods list! Grab the in-store flyer or visit the Cool Foods microsite for a complete product roundup and list of savings! Yogurt is a staple food in my refrigerator. I enjoy trying yogurts from different brands. The key things I look for when I purchase yogurt is the amount of added sugar and whether it has unwanted additives. I have tried Fage Greek Yogurt a couple of times before and I liked it each time. So, I decided to pick it up this time around also. Fage yogurt boasts 18g of protein per serving. It also has 6g of natural sugar (nothing added). It also contains some probiotic cultures and the taste is not overly sweet. I purchased the 5% milk fat variety.
As far as bread goes, I was excited to try the Three Bakers Bread for the first time. Three Bakers offers a variety of frozen bread flavors. Since Halloween AKA pumpkin season is upon us, I picked up the ‘Great Seed Whole Grain and 7 Seed’ (Long name – I know :)) bread because it had pumpkin seeds in it. We ended up liking it! It has a slight nutty taste and it was mildly sweet. These were just the flavors I needed to make my sandwich. BTW, I got to know of this recipe from a friend who is also a mom to two adorable girls. She told me why this is her preferred snack for her girls. Given that they are fussy eaters, she likes to sneak in different veggies each time she makes this sandwich. Since she adds mayo to the mix, her girls gobble this sandwich up in just a few bites. I am always looking for simple recipes that are not only easy and quick to make but also taste great. This is precisely why I chose to prepare and share this recipe with you today.
Now let me walk you through the recipe to make these Indian Spiced Yogurt Sandwiches. To a mixing bowl, add plain Fage Greek Yogurt, egg-free mayonnaise, salt, pepper, ginger paste, finely chopped veggies like bell pepper (add colorful bell peppers to make it look more appetizing), onions & grated carrots. You can even add grated beets for more color and flavor. Next add chopped parsley. Mix everything well. Keep it aside for now. Heat oil in a pan. Temper mustard seeds and once they crackle, add some chopped green chilies and roughly torn curry leaves to it. Fry for about 15 seconds. Pour this tempering over the yogurt mixture. Mix it well. The stuffing is now ready. Arrange 4 Three Bakers Bread slices on a tray and spread this yogurt mixture over each slice. Top with some lettuce leaves. Close it like a sandwich using another bread slice and toast it in a pan using butter. You can even grill it in a panini maker. Cut in any desired shape and serve. If you like a cold sandwich, don’t toast it and consume immediately. Serve this sandwich with some ketchup or chutney.
