If you're anything like me, you're a sucker for easy desserts that look impressive but come together in minutes. Just like my Jhajhariya recipe (made in the microwave!), or my Air Fryer Apples recipe, this mousse is perfect for special occasions. In fact, I've been making these individual mousse cups for Rakshabandhan three years in a row now-and we never get tired of them!

What is Rakshabandhan
Before you know it, the holiday season will be here-and for us Indians, that means a lineup of beautiful festivals, one after the other! Starting with Karadaiyan Nonbu, a traditional South Indian festival for married women, we soon celebrate Rakshabandhan, one of the most heartfelt festivals of all.
Rakshabandhan, or Rakhi, is a special day that celebrates the bond between siblings. On this day, sisters of all ages tie a decorative thread-called a Rakhi-around their brothers' wrists. This simple yet meaningful gesture symbolizes love, protection, and lifelong support. In return, brothers vow to protect their sisters always and shower them with blessings-and yes, gifts too!
I love how sweet and sentimental Rakhi is. In my home, it has become a tradition to make a special dessert to celebrate. And that's how this Apple Cheesecake Mousse became a Rakshabandhan staple for us-easy to make, loved by all, and filled with festive flavors.
Celebrating Rakshabandhan
Although Rakshabandhan is not traditionally celebrated in South India, growing up in cosmopolitan Bombay meant we got to experience festivals from all cultures. As kids, watching the whole city celebrate Rakhi with such enthusiasm made me want to join in too-and my parents happily agreed.
Since then, I've always tied a rakhi to my younger brother, and my mom would make her signature Paal Poli for the occasion-a treat we looked forward to every year. Now, with my brother and me living on different continents, we make do with Amazon deliveries and video calls. It's not quite the same, and KR and his sister feel it too. Festivals like these truly remind you how much you miss being close to family.

Apples - Choose juicy red apples for this recipe-the sweeter, the better! They add natural flavor and texture to the mousse.
P.S. I also use apples to make my Vegan Honey-it's magic!
Pistachios - I used whole pistachios and chopped them using this handy nut chopper. They add the perfect crunch and color contrast to the mousse.
I've used original full-fat cream cheese for that classic rich texture. You can also use low-fat cream cheese if preferred.
🔸 Tip: Let it come to room temperature before using-it blends better when soft.
