Who doesn't love waffles? But wait, can vegans eat waffles? Of course, you can! There are many store-bought vegan waffle mixes available or you can make it at home as I do.
Be it breakfast, brunch, dessert, or even dinner, indulging in a plate of sweet or savory fluffy waffles is one of the best ways to treat yourself.
You don't need eggs or dairy to make them either, hearty vegan waffles are easy and you won't even notice the difference in the taste. They are very easy to make.

I am a sucker for savory breakfasts and evening snacks! I always end up making savory treats over sweet ones for brekkie or evening snacks.
That's why I am always creating new and exciting savory recipes that can be served as a meal at any time of the day.
After seeing the success of Dosa waffles, here's another savory vegan gluten-free waffles recipe that I created using leftovers! It's similar to potato dosa or pancakes.
In my opinion, these are the best waffles you can have! The texture is exactly what I want in a waffle. They’re perfectly crisp on the outside, with a warm soft center!
These fluffy potato waffles will quickly become a family favorite. Easy savory vegan snacks like these when served are sure to make your dining table an inviting sight!

Ingredients needed 🧾
Potato - Potatoes with more starch like Russets or Yukon golds will work here. Boil the potato beforehand. You can also use leftover mashed potatoes in this recipe.
In fact, you can also use frozen (thawed) shredded hashbrown potatoes to save time. You will have to adjust the cooking time accordingly. They will take a bit longer to cook.
Flours - Gluten-free All-purpose flour and rice flour are the two kinds of flour needed in this vegan waffles recipe.
Hummus - I have used plain gluten-free hummus here. You can either make it at home or use a store-bought one. You can also use flavored hummus here.
Vegetables and herbs - onions and cilantro are what I have added. Feel free to add more veggies of your choice.
Spices - peppercorns, red pepper flakes, Italian seasonings, and garlic are the basic spices you will need.
Vegan butter - Use any dairy-free butter you have. For extra flavor, use herb butter or Thecha butter.
Besides these ingredients, you will also need a waffle maker. I have been using it for years.
How to make it 🔪

- In a bowl, add boiled potatoes and mash them with a fork. Alternatively, you can even grate them.
- Then add any vegan herb butter, crushed black pepper, and red pepper flakes.
- Next, add the hummus.
- Then add Italian seasonings and cilantro.
- Now add the all-purpose flour and rice flour to the bowl.
- Add the minced garlic and chopped onions to the bowl.
- Followed by water or vegan buttermilk. Add salt at this point. Mix all these together and make a thick batter. Add more water as needed to do so.
- Preheat the waffle maker, with a cooking spray grease the molds. Pour a ladle full of batter into each mold of the waffle maker. Ensure it spreads evenly and all over. Chef Tip - Cook as per the maker's instructions. Once it gets the desired brown color, take them carefully. It could take 4-5 minutes.
Serving suggestions 🍽
Top these delicious waffles with grated cheese, chopped green onions, and bell peppers for extra flavor. You can also top it with regular or dairy-free cheese.
Then you can serve these instant mashed potato waffles with some Sriracha, vegan mayo, sour cream, ketchup, hot chili oil, applesauce, pesto, salsa, or chutney on the side.
Serve these waffles with a side of fruit salad, avocado, guacamole, Cucumber Salad, soup, or a bowl of yogurt sauce (plain yogurt, dried garlic, cumin powder, and salt).
You can make and serve these easy vegan waffles for breakfast, as a snack, or as the main course. They are so tasty and filling, that you love them any time of the day!
Top recipe tips 💭
Feel free to add more veggies to the batter like grated zucchini, carrots, onions, bell peppers, etc to make this savory vegan snack more healthy.
If your butter is salted and even your hummus has salt, add salt to the batter accordingly. Instead of water, you can also use buttermilk or chaas.
You can also add baking powder to the batter to make it more soft and fluffy. If you do add it, allow the batter to rest for 10 minutes.
Instead of using cheese as a topping, you can also mix it into the batter. Use sharp cheddar cheese (if not vegan) or any vegan shredded cheese.

Choose the right kind of potato for this savory waffle recipe. Potatoes with more starch like Russets or Yukon golds will work here.
Instead of potatoes, you can also use sweet potatoes. You can either mash it with a masher or grate it. Leftover mashed potatoes or frozen hashbrowns can also be used.
Instead of all-purpose flour, you can use any other flour like tapioca flour, whole wheat flour, or chickpea flour. Adding rice flour is key here.

This recipe calls for a waffle maker. If you don't have one, you can use this batter to make regular savory pancakes.
The batter can be made ahead of time. It stays good for a week in the fridge. You can also freeze this waffle mix if needed.
Thaw it overnight in the fridge and then use the batter to make savory waffles. Leftover cooked waffles can also be stored in the fridge for 2-3 days or frozen.
Reheat in the microwave or in a toaster and enjoy. The potato waffles will not be as crisp but will taste good. It's best to make these waffles fresh.

Followed the recipe (except for using regular buttermilk & besan). They turned out super soft in the waffle maker and could not remove them. What did I do wrong? Ended up making pancakes; tasted great, was a hit with the kids too 🙂

Yes, you can use the batter to make pancakes as well. But did you add any other flour if not besan? If you skip buttermilk and added water instead, that should not have made much difference. But without besan, there would be no binding.

I only added besan & rice flour. Would have loved to have crispy waffles.

Normally if you add rice flour, they turn out crispy. I have made this many times with no issues. Some things I can think of are - ensure the waffle maker is hot when you add the batter. That starts the cooking process immediately. Also, try adding milk/buttermilk along with water to make the batter. Hopefully, that should work.
