    One Pot Spicy Thai Noodles

    Thai cuisine is very distinct. One Pot Spicy Thai Noodles is cooked in red curry paste along with veggies making it an ideal dinner recipe. Bon Appetit!

    Thai cuisine comes a close second for me after Chinese Food and Italian food follows after that. I enjoy eating and cooking all these cuisines as much as I enjoy Indian food. I have occasionally tried my hand at other world cuisines like Korean, Malaysian, European, American, Mexican, and Japanese. I love to experiment with food. That is what keeps me going. There are so many cuisines in this world and each one has its own sets of unique ingredients and flavors. It's so much fun to read about each food palate and learn something new every time. I have started watching this interesting show on Netflix called 'Street Food around the World'. I wish I could get the job of that host! It's ideal for me.

    In that show, every episode is dedicated to a new country and its popular street food. There is so much inspiration out there, it's unbelievable. One just needs to keep one's eyes open and dare to try. I have set a personal target for myself. Every month, I try out at-least two recipes from world cuisine and feature them on my blog. Korean Pancakes/Pajeon and Vegetarian Thai Chilly Fried Rice have become a regular in my kitchen now. Since I have a thing for Thai food, I didn't want to stop at just one recipe. Hence I also made Asian Style Thai Basil Tofu Stir Fry Noodles Recipe, Thai Mutter Paneer, and Butternut Squash & Chickpea Thai Curry. It had been on my mind for a long time now to make Thai noodles. I finally went ahead and made it on KR's Sunday morning request. He woke up and announced that he felt like eating noodles and since his wish is my command, I made it!

    I may sound like some obedient wife, but am far from that! 😉 I had my own vested interest in making these noodles actually. Since it had not appeared on my blog, I saw it as an opportunity. Guilty as charged! Cook the linguine noodles as per the instructions on the pack. Now prepare the sauce by whisking vegan red curry paste, soy sauce, ginger, and sriracha sauce together. Keep it aside for now. Heat oil in a wok. Fry garlic and onions till the rawness goes away. I like to slightly burn the garlic to give it an enhanced flavor. Then add the veggies like bell peppers and mushrooms along with salt and saute for 3-4 minutes, till the veggies are cooked. Now add the prepared sauce. Mix it all together and cook for 2 minutes.

    Finally, add the cooked noodles and toss them well so that the sauce coats properly. Sprinkle dried cilantro or fresh cilantro (chopped) on top and serve hot.

    These Thai flavored noodles are lip-smacking! You can also sprinkle some crushed peanuts on top. They taste great with the noodles giving it a feel of Pad Thai noodles. It can be served as a stand-alone main dish. It's quick and easy and full of flavor!

    Ingredients 

    • 1 packet Linguine Noodles
    • 1/2 cup red curry paste
    • 1 tbsp soy sauce
    • 2 tbsp sriracha sauce
    • Half inch ginger minced
    • 1 tbsp oil
    • 4 garlic cloves minced
    • 1 onion chopped
    • 1 cup chopped bell peppers
    • 1 cup chopped mushrooms
    • Salt as required
    • 2 tbsp dried cilantro

    Notes

    Feel free to use any other veggies in this recipe as per your taste.
    You can make this recipe using regular noodles as well.

    KR was extremely pleased with the final outcome and even volunteered to help me with the photo-shoot! Although he lost his patience soon enough and couldn't wait any longer to eat the noodles. 🙂 I am just glad he helped. I got some great shots of the food and in that way, both of us came out happy. This noodles are hot and fiery mainly due to sriracha sauce. You can adjust the spice quotient as per your preference. However, in my opinion, it tastes the best when it's that hot.

      Is this uncomfortably spicy, or just spicy enough? Is the curry paste spicy? I have never cooked with it before.
      If cooking for someone who enjoys slightly spicy food, how should I adjust?

        It's not very spicy. But if you are in doubt, add just a tablespoon of sriracha sauce first, taste, and then add another tablespoon. Hope this helps.

      I tried this recipe with some variation- added bell pepper instead of mushrooms, Substituted green onions instead of parsley and I must say my kids and I loved it. I think I cooked or washed the Thai noodles too many times hence it broke but the taste was spot on. Thanks for your quick b easy recipe look forward to making and enjoying more.

      Would love to try this, along with many of your recipes I'm seeing!
      What size (ounces?) is the packet of Linguine noodles?
      Also, how many this dish serve? I don't see such information on this and many of your other recipes that I've noted to try. I find recipes that list number of servings very helpful so I know whether it's the right amount or if I should double the recipe.

        I used 1 lb of noodles. My recipes normally serve 4 people. Hope this information helps. Let me know if you need something more.
