It's literally what the name suggests - it's got cheese, corn, and chillies that are seasoned with spices and herbs. It's served on a toast (like an open sandwich). These are enough reasons to fall in love with this Cheese Corn toast recipe! It's got the potential to satisfy your hunger and cravings!
This Indian corn cheese toast recipe is my go-to recipe on busy days. I used to have this a lot during my college days from a local street food vendor. Since then I have become a fan of this Indian corn recipe. The only change I made to this dish was to make it vegan! Yes, it's a vegan sandwich recipe.

Street food is my favorite cuisine
There are many cuisines in the world but if I have to pick my favorite, it has to be street food! I know, you cannot call street food a cuisine but don't you think we should? Every region has its street food which has a cult following. I grew up in Bombay where the street food scene is amazing!
I have many happy memories of enjoying street food with my family and friends. Be it the Bombay Sandwich, Vada Pav, Ragda Pattice, Bhel Puri, or Pav Bhaji - our days would feel incomplete without these dishes! During monsoons, Dad and I would have one Masala Corn/Bhutta every day! It was our favorite evening snack.
Being a lover of street food, I also enjoy creating fun fusion recipes like Mexican Pani Puri, Puff Pastry Samosa, Dabeli Pizza, Indian Curry Pasta, Matar Kachori Pinwheels, and Tandoori Cheese Quesadillas. They are so good!

Ingredients needed 🧾
Bread - White, brown, multigrain, or any other variety of bread can be used for this recipe. Leftover bread that's about to go stale can also be used. You can also use sourdough bread.
Cream Cheese - I used Kite Hill Cream Cheese that's dairy-free. But if you want, you can also use vegan plain/flavored butter instead.
Cheese - For this recipe, the more cheese the better it is! Use any vegan cheese (sliced/shredded/grated) that melts.
Veggies - Bell peppers and frozen yellow corn are the two main ingredients in this Indian snack recipe. Other than these, you will also need onions which will give it a nice crunchy flavor.
Spices - Chaat masala, freshly crushed black pepper, paprika, and cumin powder give this Chilli Cheese Toast a very nice smack!
Cilantro (or parsley), garlic, and green chilies/serrano peppers/jalapenos for additional flavoring.
How to make it 🔪

- The first step is to toast the bread slices. Smear some vegan cream cheese over the bread slices before you toast them.
- You can either toast them in a toaster or line a baking tray with parchment paper and broil them on low for 2-3 minutes in the oven till they turn brown and crisp. Be careful to not burn them.
- Meanwhile, thaw frozen yellow corn and chop the bell pepper. Transfer them to a mixing bowl.
- Add chopped cilantro, green chilies (reserving 1-2 tablespoons for garnish), onions, and minced garlic.
- Then mix in the shredded cheese, chaat masala, paprika, cumin powder, and crushed black pepper.
- Add lemon juice and salt as needed and give it all a good mix.
- Spread a generous helping of this mixture over the bread slices.
- Top it with a generous layer of grated cheese.
- Garnish with remaining cilantro and green chilies and broil at low temperature (400 degrees F) for 2-3 minutes or till the cheese melts.
Serving suggestions 🍽
Take it out of the oven and serve this creamy Cheese Corn Toast immediately. Sprinkle some crushed red pepper flakes and oregano on top if you want to up the taste and spice quotient. Drizzle some ketchup/vegan mayo/chutney on top or serve them on the side. Just to balance it out, maybe serve it with a salad or soup.
There are many ways in which you can serve them. Serve them as is, cut them in triangles, or cut them as breadsticks. You can also serve them as a regular sandwich instead of an open-faced one.
This vegan sandwich recipe can be made for parties and it will be a HIT when served! We enjoyed it for breakfast and lunch! So it is pretty versatile and can be had for any meal of the day! Kids will love it because of the cheese and you can secretly sneak in all the veggies! Perfect, isn't it?

This vegan breakfast sandwich recipe is very customizable. Feel free to adjust the ingredients based on your preference and availability. Instead of cream cheese, you can also use vegan butter, sour cream, pesto, or chutney. If you like the flavor of nutritional yeast, mix it with vegan butter. Since chaat masala, lemon juice, and cheese are already salty, add salt only at the end, and that too after tasting the mixture.

White, brown, or any other variety of bread can be used for this recipe. Leftover bread that's about to go stale can also be used. You can also use sourdough bread or bagels to make this corn and cream cheese toast.
You can also make this vegan corn and cream cheese toast on a skillet or tawa instead of the oven. If doing that, cover it with a lid to help the cheese melt. Also, keep the flame low to medium. You can also make it in the Air Fryer.
The corn mixture can be prepared in advance (not the cheese) and stored in the fridge for 2-3 days. You may also freeze it. If you have some leftover cream cheese toasts (that would be a very rare scenario), store them in the fridge. Reheat and serve as needed. However, this tastes best and is crisp when fresh. Feel free to use the leftover corn mixture in other recipes like parathas, quesadillas, tortillas, or Potato Sandwich.
Feel free to add in more veggies of your choice like mushrooms, broccoli, olives, etc. Throw in some greens like spinach, kale, and fenugreek leaves to make this Indian corn recipe even more nourishing.
If you are not vegan, use salted or unsalted butter to spread on the toast. Add some grated paneer to the mix. It tastes amazing! Top it with shredded Amul cheese, mozzarella cheese, or any processed cheese to give this chilli corn toast the ultimate cheese experience.
