I had come across the term ‘Blender Pancakes‘ which got me intrigued. One of my favorite pastime is to browse through Pinterest to check out the latest food trends and that is when I came across this terminology. So basically it is the process of whipping up a pancake batter in a blender. This got me thinking. What if I could reverse this and create a smoothie recipe in a blender that tastes like a pancake? For this, I had to ensure that the flavors/ingredients I use reminds me of pancakes. Since I wanted to make a vegan drink, I had to keep this recipe dairy-free. I enjoy having smoothies for breakfast as that is the best way to consume fruits for a non-fruit eater like me. The idea of creating a ‘Pancake Smoothie’ was really exciting for me for various reasons.
We have begun a weight loss journey together and for that we have created a fitness regime. It includes an hour-long brisk morning walk, alternating between cycling and working out in the gym and eating right along with consuming lots of fluids. If drinking lots of water is essential to flush the toxins in the body, then even consuming fruit based drinks which are high in fiber, carbs and protein is very important. Especially after a strenuous workout session, its essential to feed your body with a good post-workout smoothie. It’s the best way to get a lot of good nutrition in a quick drink and this recipe delivers just that. If you like blueberry pancakes, you’ll love this Blueberry Pancake Smoothie. It’s essentially that pancake flavor in a glass!
Since this is a blender recipe, you of course need a blender to make this one! Add almond milk, oats, cashews (you can also use raw cashews), blueberries, cinnamon powder, banana and dates. You can also add Vegan Milk Masala instead of store-bought protein powder as its more nourishing and free of preservatives. Blend it until its smooth and creamy. Serve this immediately or chilled.
The banana gives it density and the other ingredients makes it toothsome. Blueberries are a power ingredient. They are high in antioxidants, they boost brain health, help reduce weight, alleviates inflammation, supports digestion and promotes overall heart health. In fact, its said that you must give at least 10 blueberries to your little ones everyday to improve their well-being.

- 1 cup almond milk
- 1/2 cup frozen blueberries
- 1 tsp cinnamon powder
- 1 banana
- 2-3 pitted dates
- 2 tbsp oats
- 2 tbsp cashews
- 1 tbsp milk masala
