I recommend using plain white, square-shaped sandwich bread to make high tea mini cucumber sandwiches. They are soft, neutral, and lets the cucumber and cream cheese filling shine.

I recommend using English cucumbers-they have fewer seeds, thin skin, and don't need to be peeled. For extra crunch, Persian cucumbers are a great option. You can also use regular American cucumbers, seedless cucumbers, or Indian cucumbers if that's what you have on hand.
Cream Cheese
My go-to is Philadelphia cream cheese because the acidity and tang of this cream cheese pairs well with the mildly flavored cucumber. But any other brand will also work. You can even use homemade cream cheese if you prefer.
👉 Pro Tip: Make sure the cream cheese is softened before mixing. Leave it out at room temperature for a couple of hours or microwave it in 5-second intervals until it's spreadable.
Whipped cream cheese is also a great choice! It's lighter, fluffier, and even easier to spread-perfect for delicate vegetarian tea sandwiches. If you're short on time, you can also use flavored cream cheese, such as veggie cream cheese or herb and garlic, for extra taste without extra prep.

Also, mince the green chillies and set them aside. - Add softened cream cheese to a mixing bowl. This step is key-the cream cheese must be soft and spreadable. Let it sit at room temperature for a couple of hours, or microwave it in 5-second bursts until it reaches the right consistency.
- Add minced green chillies, and minced garlic to the bowl.
- Then add chopped fresh parsley.

- Empty a packet of Fresh Success Potato Topping into the bowl. Since it already contains salt, I don't add any extra salt separately.
- Drizzle a little oil over the mixture and mix until everything is well combined. For a bright, tangy touch, you can also add a splash of fresh lemon juice. If you'd like the spread to be extra smooth and easy to spread, use a hand blender to whip it to a creamy consistency.
- Cut the edges off the bread slices. The edges can be used to make Pangrattato or croutons.
