Mango - I have used homemade mango pulp. You can also use store-bought mango pulp. Just read the labels to check if no extra sugar is added. You can also use fresh or frozen ripe mangoes. Sweetener - Use homemade vegan honey. Read the notes below for substitution ideas. Since mangoes are naturally sweet, you can reduce the amount of added sugars accordingly.

To speed up the ripening process of an avocado, place it in a paper bag for up to 24-48 hours. The green avocados turn dark green or black when ripe. Squeeze it lightly. It should be slightly soft. If the avocado feels mushy, it is overripe and if it still feels firm, it is under-ripe. If you have extra avocados that have become ripe, freeze them. I have used homemade Vegan Honey in this recipe. You can use maple syrup, agave, dates, fruit jam, sugar, dried figs, apricots, candied ginger, honey (if not vegan), or any other sweetener of choice. If the mangoes are sweet enough or using sweetened dairy-free milk, then skip adding any sweeteners.
I prefer using dairy-free creamers (like oat milk creamer) when making smoothies. It will give this Avocado Mango Smoothie a creamier consistency. You can also use any vegan milk like oat milk, flax milk, hemp milk, almond milk, coconut milk (that comes in a carton, not a can), or cashew milk. I didn’t have any bread for toast, so was looking for something with mango and avocado for breakfast and found this! Very delicious and smooth, but consistency was too thick to sip, so I added a lot more liquid. I think next time I’ll try water rather than the plant milk.
