I have grown up eating this delicious snack! It's mashed potatoes mixed with fragrant and earthy spices sandwiched between bread slices and toasted.
This Indian grilled sandwich has a crispy texture on the outside and the spiced potatoes bring in the softness. The addition of spicy green chutney and the sweet and tangy tomato ketchup makes this Indian-style masala sandwich recipe a flavor bomb! This recipe can be made in various ways depending on your preference for flavors and availability of ingredients.

Ingredients needed 🧾
Potatoes - White sandwich bread is the best! But you can use any variety of bread when making this Indian potato breakfast sandwich.
Spices - cumin powder, turmeric powder, garam masala, chilly powder, chaat masala, amchur powder, and onion powder are the basic spices you would need to make this Indian vegetarian sandwich recipe. Sandwich masala is another spice mix that's good to add if you have it.
Aromatics - dried mixed herbs, dried parsley, cilantro, green chillies, and ginger garlic paste give this Bombay-style Aloo Grilled Sandwich an aromatic flavor.
Butter - To make this Indian potato grill sandwich recipe vegan, use any plain or herb butter that's dairy-free. You can also make it at home by following this Thecha Butter recipe. If not vegan, use any salted or unsalted butter. Amul Butter works like magic here!

How to make it 🔪
For the potato masala
- Boil potatoes. Transfer to a bowl and mash them. You can also grate them.
- To that, add chilly powder, cumin powder, turmeric, and garam masala.
- Then add onion powder, mixed herbs, dried parsley
- Now add chaat masala, amchur powder, and sandwich masala (if adding).
- Next add minced green chillies, ginger-garlic paste, and chopped cilantro.
- Mix it all. Taste and add salt if needed.

To assemble the sandwich
- Cut the edges of the bread slices. Make breadcrumbs out of those discarded edges and store them.
- Spread vegan butter on every slice.
- Smear one bread with green chutney and smear the other bread slice with tomato ketchup.
- Layer the bread slice which has green chutney with a generous amount of spiced potato filling. Add grated cheese on top if adding.
- Close with the tomato ketchup side of the bread slice.
- Smear vegan butter on top and in the grill pan. Toast for 2-3 minutes on each side, pressing gently with a spatula, until both sides are uniformly golden brown and crispy. The flame has to be on low-medium. Chef tip - Place these sandwiches on a cookie rack for a few minutes to cool down. This prevents your sandwich from getting soggy.
Serving suggestions 🍽
Take them off the grill pan. Cut each sandwich diagonally into triangles or rectangles. Sprinkle some chaat masala if you want, on top. You can also dab sev all around it if you want. Serve these Potato Stuffed Sandwiches with a side of ketchup, and green chutney. You can also add some potato chips or banana chips on the side.
This scrumptious aloo masala sandwich is great for breakfast, school lunch boxes (packed in foil, parchment, or butter paper), after-school snacks, kids' parties, and evening snacks. If you want to make these Indian-style grilled potato sandwiches for a party or potluck, girl them just before the event and then cut them into bite-sized pieces (small squares) and serve. White sandwich bread is the best! But you can use any variety of bread like brown, gluten-free, sourdough, Rye bread, sliced Italian loaf, multigrain bread, homemade bread, millet bread, etc. Just don't use any sweet bread. If you want to make it without bread, serve it as lettuce wraps.
Smear the bread slice with green chutney first. Then smear tomato ketchup. Now add a layer of the spiced potato mixture. Top it with cheese and toasted sesame seeds. Broil till the cheese melts. You can either boil the potatoes in advance or you can prepare the mashed potato mixture ahead of time and store it in the fridge for 3-4 days. Reheat it in the microwave. Then, make the veg Potato Toast fresh as they will get soggy eventually. Leftover potato masala can also be used to make stuffed parathas, as a filling for dosa, Quiche, in Pizza, Pav Bhaji, Aloo Tikki, or Vada Pav!
Add a layer of lettuce, and sliced veggies like onions, tomatoes, beets, bell peppers, or avocado to make it heartier and more flavorful. If making it for kids, keep it mildly spiced and add cheese slice, shredded cheese, or white sauce on top to make Aloo Cheese Toast.
Add some cooked and mashed kidney beans/rajma, chickpeas, paneer, cooked raw banana, sweet potatoes, sweet corn, green peas, chopped spinach, or mashed avocado with the potatoes. To make this Indian breakfast sandwich Jain, skip the potatoes and use any of these ingredients instead to make the stuffing. Also skip adding onion powder, and ginger-garlic paste.
Boiling potatoes is an essential step in this recipe. Potatoes will cook more quickly if you cut them up into chunks before boiling. Peel the skin once the boiled potatoes cool down. We need mashed potatoes in this sandwich recipe. Starchy potatoes like Russets or Idahos are the best varieties for boiling.
It's recommended that you boil potatoes with the skin on. This keeps the nutrients inside the potato during the cooking process. It’s important to drain the potatoes immediately after cooking. You know they are cooked when you can slide the tip of a knife or fork through it without resistance.
Microwave method - In a microwave-safe bowl, add water and potatoes. Microwave it for 13-15 minutes.
Pressure Cooker - In the cooker, add water and potatoes. Cook it on a stovetop for 3-4 whistles. Adding salt while boiling is a personal preference.
Instant Pot - Pour the water into the inner pot of the pressure cooker. Put the potatoes in the steamer basket, then lower it into the pot. Cook in manual mode for 3 minutes and release pressure immediately.
Green chutney can be substituted with pesto and tomato ketchup can be substituted with schezwan sauce or sriracha. Instead of vegan butter, you can also cook the sandwiches in a little vegan or regular ghee. It tastes excellent. Vegan mayo can also be used instead of butter. Leftover mashed potatoes from Aloo Bharta, Vada Pav, or Puff pastry Samosa can also be used.
Instead of a grill pan, you can also use a Tawa, Toaster, or Panini maker.

For the potato masala

- 12 slices Bread slices
- 2 tablespoon vegan butter
